-2 egg whites
-4 egg yolks
-400g egg sponge cake (savoiardi)
-2 glasses of coffee
-Amaretto glass (optional)
First beat the egg yolks with half of the sugar until they double in size. In a separate bowl, beat the egg whites with the other half of the sugar until they reach the meringue stage. Add the mascarpone together with the egg yolk and the beaten sugar. Gently add the meringue so that it does not lower the stiff peaks. The tiramisu cream is ready and delicious!
Now it’s time to make the coffee. If the children of the house are going to eat Tiramisu, it is preferable to make a soft and decaffeinated coffee! We let it cool a little. If we want we can add a glass of Amareto….!!!
Once all the ingredients are ready, we can proceed to assemble the dessert. So we take a slightly deep tray and start …..
We place a first layer of sponge cakes (or Savoiardi) previously soaked in coffee. We must try to let the coffee penetrate the sponge cake but without soaking it too much so that it does not fall apart. On top we put a good layer of cream. Then sprinkle with cocoa powder. Repeat the operation as many times as you have sponge cakes and cream. The last layer has to be with the cocoa powder. Once the process is finished, put the dessert in the refrigerator. The more hours the better!
In Italian the word “tira-mi-sú” means “pull me up” which means that this dessert will give you a lot of energy and will lift you out of the chair!!! Delizioso!!!
