Involtini” are meat rolls with cheese and ham inside. They are very easy to make and very tasty! At home we have eaten them all our life in meals with the “famiglia”! You can make them with veal or if you prefer with chicken breasts. Accompanied with vegetables they go great! Here are the ingredients:

-Veal fillets or chicken breasts (the quantity depends on the people and the rolls).

-Sage leaves or bay leaves (one that gives flavor to the bottom).

-Slices of Serrano ham (rich and not too fatty!). In Italy they use Parma ham, but here the ham is excellent and any good Serrano ham is “benissimo” for us!

-Cheese slices (thin and tasty sliced cheese). If we are on a diet we can do it all with ingredients a little lighter.

-Salt and pepper

-Olive oil

Preparation:

-Place the veal or chicken fillets on a board, season lightly with salt and pepper and place a slice of ham and a slice of cheese so that it does not protrude since they must be rolled up.

-Roll the fillets from the narrowest side to the other and close it using toothpicks to seal, put a toothpick at each end and in the middle a sage leaf with another toothpick that goes through it to keep it caught during cooking (it is optional but recommended, it will give a “sapore” molto buono ).

-Once all the fillets are stuffed with the ham and cheese slices and well sealed with the toothpicks, season lightly on the outside (according to taste),

-Put a little oil in a frying pan and fry the “involtini” over medium heat on one side and on the other until they are golden brown on the outside and the cheese is melted inside.

It is a very simple recipe but everyone likes it, the kids love it! Serve with any vegetable, salad or puree.

Serve warm and “atenzione” with chopsticks … they do not eat!
