In Livorno, my hometown, they are called &#8220;topini.&#8221; This word means &#8220;little mice&#8221;, a form that this peculiar pasta recipe made of potato and flour takes. I pass the recipe to you as we have made it at home for generations. It is very soft and can be accompanied with different sauces or even eaten as is with a little olive oil. They are great! <\/p>\n<p> Be careful because they don&#8217;t need much cooking, a few minutes will be enough. Once done, they are thrown into a pan of boiling water abundantly. Cook for about 40 or 50 minutes (depending on the size). To know that they are already cooked you can prick with a fork. Before they are completely cool, peel and mash them with a fork or mash. <\/p>\n<p> 2-Once crushed, add the potatoes to the flour that we have prepared on the kitchen counter. <\/p>\n<p> 3- You begin to knead everything with your hands gently. Be careful not to burn yourself because the potatoes may still be hot. <\/p>\n<p> 4- Add the salt to taste while you are mixing together with the egg. <\/p>\n<p> 5- Once everything is kneaded, we form a ball. Do not knead it too much or you could make the dough hard and when you cook the gnocchi they will not be so tender. <\/p>\n<p> 6- Take a little of the dough and stretch it by rolling it under our hands, forming a round and elongated &#8220;sausage&#8221; about 2 cm thick. <\/p>\n<p> 7-We proceed in the same way with all the dough. <\/p>\n<p> 8-Once the strips are made, they are cut to the most regular shape and size possible. <\/p>\n<p> 9- The last step before boiling them is to mark them with a fork giving them the shape of the lines so that they are more beautiful. This step is optional since it is quite laborious but they will be much more beautiful when serving the \u00abtopini. <\/p>\n<p> 10- Now it&#8217;s time to boil them. Remember that they cook quickly and that the trick is to leave them enough minutes until they float to the surface. When this happens they will be ready to eat. Serve them with the sauce that you like the most. It is a forceful but very rich recipe. <\/p>\n<p> <strong> Recommendation: <\/strong> the old potato is better since it does not suck as much water and thus we will not have to add flour to the recipe. Os paso la receta tal como la hacemos en casa desde generaciones. Queda muy suave y se puede acompa\u00f1ar con diferentes salsas o incluso comerlos tal cual con un poco de aceite de oliva. Est\u00e1n buen\u00edsimos!\r\n\r\nTen cuidado porque no les hace falta mucha cocci\u00f3n, con unos minutos ser\u00e1 suficiente. Una vez hechos se echan en una cazuela de agua hirviendo abundante. El truco para saber\u00a0si est\u00e1n listos es cuando veas que van subiendo y flotando a la superficie.\r\n\r\n<strong>Ingredientes:<\/strong>\r\n\r\n-1kg de patatas\r\n\r\n-300gr de harina\r\n\r\n-sal\r\n\r\n-1 huevo\r\n\r\n<a href=\"https:\/\/www.studiogatto.es\/wp-content\/uploads\/2018\/02\/8-11.jpg\"><img class=\"alignnone size-full wp-image-7076\" src=\"https:\/\/www.studiogatto.es\/wp-content\/uploads\/2018\/02\/8-11.jpg\" alt=\"\" width=\"500\" height=\"375\"><\/a><a href=\"https:\/\/www.studiogatto.es\/wp-content\/uploads\/2018\/02\/2-14.jpg\"><img class=\"alignnone size-full wp-image-7071\" src=\"https:\/\/www.studiogatto.es\/wp-content\/uploads\/2018\/02\/2-14.jpg\" alt=\"\" width=\"764\" height=\"430\"><\/a> <a href=\"https:\/\/www.studiogatto.es\/wp-content\/uploads\/2018\/02\/7-12.jpg\"><img class=\"alignnone size-full wp-image-7075\" src=\"https:\/\/www.studiogatto.es\/wp-content\/uploads\/2018\/02\/7-12.jpg\" alt=\"\" width=\"500\" height=\"332\"><\/a>\r\n\r\n<strong>Pasos para preparar la receta:<\/strong>\r\n\r\n1- Se hierve las patatas sin pelar (para que no absorban tanta agua) en una cazuela con agua abundante y sal. Se deja cocinar aproximadamente 40 o 50 minutos(depende del tama\u00f1o). Para saber que est\u00e1n ya cocidas puedes pinchar con un tenedor. Antes de que se enfr\u00eden del todo\u00a0p\u00e9lalas\u00a0y mach\u00e1calas con un tenedor o pasapur\u00e9.\r\n\r\n2-Una vez machacadas\u00a0 incorporamos las patatas a la harina que hemos preparado en la encimera de la cocina.\r\n\r\n3- Se empieza a amasar todo con las manos suavemente. Ten cuidado de no quemarte porque las patatas a\u00fan pueden estar calientes.\r\n\r\n4- A\u00f1ade la sal a gusto mientras est\u00e1s mezclando junto con el huevo.\r\n\r\n5- Una vez amasado todo formamos una bola. No lo amases demasiado sino podr\u00edas endurecer la masa y al cocer los \u00f1oquis no quedar\u00edan tan tiernos.\r\n\r\n6- Cogemos un poco de la masa y la estiramos haci\u00e9ndola rodar bajo nuestras manos formando una \"salchicha\" redonda y alargada de unos 2 cm de grueso.\r\n\r\n7-Vamos procediendo de la misma manera con toda la masa.\r\n\r\n8-Una vez hechas las tiras, se cortan de forma y tama\u00f1o lo m\u00e1s regular posible.\r\n\r\n9- El \u00faltimo paso antes de hervirlos es marcarlos con un tenedor d\u00e1ndoles la forma de las rayitas para que queden m\u00e1s bonitos. Este paso es opcional ya que es bastante trabajoso pero quedar\u00e1n mucho m\u00e1s bonitos a la hora de servir los \"topini.\r\n\r\n10- Ahora toca hervirlos. Recordad que cuecen r\u00e1pido y que el truco consiste en dejarlos los minutos suficientes hasta que vayan flotando a la superficie. Cuando esto pase estar\u00e1n listos para comer. Servirlos con la salsa que m\u00e1s os guste. Es una receta contundente pero muy rica.\r\n\r\n<strong>Recomendaci\u00f3n:<\/strong> la patata vieja va mejor ya que no chupa tanta agua y as\u00ed no tendremos que a\u00f1adir harina a la receta.
