El fam\u00f3s hostaler <strong> Giuseppe Cipriani <\/ strong>, ha de preparar un plat especial per a la seva amiga, la comtessa Amalia Nani Monicego. Resulta que a la dona li han prohibit menjar carn cuinada per\u00f2 en cap cas troba desitjable menjar carn crua. \u00c9s un repte per al gran Cipriani.<\/p>\n<p>I \u00e9s aix\u00ed com crea un plat de carn de bou, tallat en filets fin\u00edssims i amanit amb vinagreta de tocs \u00e0cids. \u00c9s un plat que a el mateix Cipriani li recorda als colors intensos usats per <strong> <a href=\"https:\/\/es.wikipedia.org\/wiki\/Vittore_Carpaccio\" target=\"_blank\" rel=\"noopener noreferrer\"> Vittore Carpaccio <\/a> <\/ strong>, fam\u00f3s pintor veneci\u00e0 de el segle XV i per aix\u00f2 <strong> decideix utilitzar el seu nom per definir la recent creaci\u00f3 gastron\u00f2mica en honor a pintor. <\/ strong><\/p>\n<p>A la comtessa li va agradar molt el plat preparat per Cipriani i, des d&#8217;aquell moment, es va difondre a tot It\u00e0lia i al m\u00f3n sencer. Per sobre o per sota una capa de ruca fresca. Tirar fines encenalls de formatge parmes\u00e0 per sobre i un toc (a gust) de l&#8217;emulsionat de llimona. Li d\u00f3na un toc de c\u00edtric que li queda b\u00e9 a la carn i la cou una mica. Si no agrada el toc a llimona es pot posar unes gotes de vinagre bals\u00e0mic. Escampar uns grans de sal i pebre i un bon raig d&#8217;oli d&#8217;oliva extra verge.
