Mentrestant, retira l&#8217;escor\u00e7a del \u201cguanciale\u201d (cansalada ) i talla&#8217;l primer a rodanxes i despr\u00e9s a tires d&#8217;aproximadament 1 cm de gruix. Mentrestant, submergiu els espaguetis en aigua bullint i cuineu fins que estiguin \u201cal dente\u201d. Mentrestant, abocar els rovells d&#8217;ou en un bol. Afegir el formatge pecor\u00ed (si no tens pecor\u00ed, pots utilitzar parmiggi\u00e0) i assaonar amb pebre negre. Aboca un cullerot d&#8217;aigua de la pasta a la paella juntament amb el greix del \u201cguanciale\u201d. Escorreu la pasta &#8220;al dente&#8221; directament a la paella amb una mica m\u00e9s de l\u00edquid de cocci\u00f3. Remenar breument per donar sabor. Retirar del foc i abocar la barreja d&#8217;ou i pecor\u00ed a la paella. Remenar r\u00e0pidament per barrejar Perqu\u00e8 quedi crem\u00f3s, es pot afegir una mica de laigua de cocci\u00f3 de la pasta si \u00e9s necessari. Afegir el guanciale , remenar una \u00faltima vegada i servir els espaguetis a la carbonara immediatament, afegint formatge pecor\u00ed per sobre i un pessic de pebre negre.
